Larry, the best way to make sure that your boat is  at the proper angle of
heel is to always have your rail at or just below the waterline when
reaching or pointing, when running down wind (which you should never do)
make sure  you set your course so that your pole is always as far forward as
you can carry it, this will also help to insure  that  your boat is heeling
properly when the spinnaker is up.

Larry,
It is probable you folks out thataway don't use the same vernacular.  For
us, heel is a measurement telling how far that pointy thingy sticking out of
the top of your boat is tilting toward the water.  We have several ways of
spelling it on my boat:

1.  Heel.  This is when the pointy thingy is straight up or a wee bit tilty.
2. Hell. Is what my wife calls it when the tilty thingy is about half way
between straight up and the water.
3. Heal. Is what I do after my wife gets through with me if the tilty thingy
goes much further.

I have just uploaded the promised Polars to the Members area of the website.
It is in the Racing section even though it will help all of us whether
cruising or racing.  It is surprising how much this helps course plotting
and best VMG.   All the calculations are here including tables and extra
plots so you can develop your own given modifications made.  

There is also a good discussion and calculation of Static Stability which
buttresses our discussion a short time ago.    While it mathematically says
we can safely heel 61 degrees.... I am not going to test this!  Perhaps that
is something our Transpac folks could test and report on?
