Max, For all boat fittings, always best to use 316 where possible, to get the extra corrosion resistance. The "factor of safety" on boat fittings is very high, it is always the corrosion issue that bites you.

That's the issue, 304 has less resistance to corrosion, but is stronger due to a higher content of carbon....

I believe 316 is a higher rust resistant grade, don't know how that translates into strength.
