Hello David,
Please allow me to offer my two cents here.
The hot water heater does not "rob" the engine of heat. Only excess heat goes to the hot water heater if you are running a thermostat. By putting the hot water heater between the engine and heat exchanger, you allow the hot water heater to heat up in a minimal amount of time. Once the hot water heater is heated, the engine heat exchanger will then remove excess heat from the engine.
If the hot water heater interior heating coils sprang a leak, your engine water would contaminate the potable water system on the boat but most likely the engine would not overheat because your potable water system would contain the pressure. You may not know that if you drank the antifreeze contaminated water though because you would be out of commission.
Most hot water heaters use either stainless steel or copper-nickel coils so they are pretty much failsafe. You are more likely to have a leak from the connecting rubber hoses than the heater coils in the hot water heater. There is too much liability for the water heater manufacturers to scrimp on materials on the interior hot water heater coils.

Thanks for all the info. Max, the diagrams are very helpful. My concern is that it appears that the water heater is in line with the heat exchanger. Does this rob the engine of heat? If the water heater and the heat exchanger are in line, what if the water heater fails - will this effect the engine?
