Max, if you have really good wind, 15-20 knots you will appreciate the extra
weight on the windward side of your boat.  I would suggest that everyone
that is not doing something be on the rail near the mast area if possible.
Also when tacking have one or two folks at the mast to help the jib around.
Spinnaker takedowns can be complicated, we have found that the best for us
is a cockpit takedown vs the forward hatch as we use symmetrical spinnakers
with no socks.

Larry, what about the seventh and the eight, are they needed to be hanging
on the windward rail, or they will be just extra weight?? 
Does the boat reallly needs this extra weight on the rail?

Max, we have found that 6-8 works best for us on windward/leeward races.
You almost need two on the foredeck, one on the main/traveler and one on jib
trim and of course one on the helm which leaves one on a six man crew for
relief.
