Joe, the two defender links show single mount pods and then additional options on taller binnacle guards,  Edson also has nice single  pod mounts for lower on the guard if you have room.   Edson also has taller binnacle guards, but I believe Edson tends to be more expensive.
 
I mounted my chart plotter above the compass and added a taller angled guard so that there is still room to grab the guard without grabbing the instrument, it is angled slightly forward for visibility of the screen, you can see it pretty good at our blog in the video from oregon offshore this year.  Hope this helps.

    I have a related problem.  I mounted my Garmin wind read-out at the top of my Edson binnacle guard. Now everyone grabs it as they go by. I would like to add an additional higher guard to protect the instrument and give a handhold because one is needed there. Any suggestions? Joe
