JACE has the collapsing post as well (they are available on Catalina
Direct, Ruff if you want to change yours). The table fits well one way
and not so well the other. I suspect that the post is a bit off center,
in our case about 1". But our will go down all the way either way. It
works better if the container is outboard, although it makes it a bit
more difficult to reach the clamp screw.
Ours has gotten a bit stiff over the years we have had the boat, and
you have to put the pressure directly over the post to lower it
successfully or it will bind. If Russ is right and the collapsible post
is an addition, then I would guess the accuracy of the mount might be
suspect. If your table doesn't fit either way (over laps the settee in
one direction and gaps in the other) then your idea will give you a fit
in one position for sure, like JACE. Otherwise the post might have to
move to get it square if you wish it to fit snugly both ways. Also if
the table has been converted to drop leaf, the hinges might add a bit to
the width, and could have been done after the original installation, in
which case it would be off about 1/8 to 1/16 of an inch I would guess,
one way or another.
I'm really chunky (read that as FATSO), so I generally turn the table
athwartships when I eat or sit on the forward settee facing aft. I keep
thinking I will change the design a bit, but it is really low priority,
especially as that would mean doing some mods to the holding tank (oh
the wonders of holding tanks and that end of the plumbing spectrum).
